Il persut taront viene ottenuto sezionando il prosciutto, ricavandone la culatta che è priva di fiocco, stinco e osso femorale. Il pregiato taglio è coperto da un lato dalla cotenna e dall'altro lato dallo stucco composto da farina di riso e sugna. La lunga stagionatura ne esalta il gusto ed il sapore morbido e gustoso. Una volta deconfezionato asciugare con un panno di carta assorbente, rimuovere parte della cotenna e posizionare sull'affettatrice il prodotto con il grasso verso l'alto.
